Hummus

A sauce that tastes of cumin and ajvar. Ajvar is available either strong or mild – choose whichever is appropriate. It you want an extra kick, flavour with tabasco. Önder likes serving this sauce with kebabs, but it also goes well with Á la Bazaar's other dishes.

Wrap with chicken kebab and hummus
IngredienTS:
Chickpeas, tinned 2 dl
Lemon juice 1-2 tablespoons
Clove of garlic 2
Tahini (sesame paste) 1 tablespoon
Cumin, salt and olive oil to taste
Olive oil  


WHAT TO DO:
Rinse the tinned chickpeas in a sieve under running water. Mix in a food processor together with the lemon juice, tahini and garlic to form a smooth paste. Flavour with the spices and perhaps dilute with water or oil. Garnish with a little fine olive oil.
